Late for work, not much time to cook but yet want a home cooked meal. Here are some quick, easy to prepare recipes for you.
PEAS WITH MUSHROOMS
Ingredients
You will need
1 pkt. frozen peas
1 cup diced celery
A quarter lb. mushrooms
2 tbsp. oil
1 teaspn. salt
1 cup water
1 and a half teaspn. marmite
1 tbsp. cornflour
Method
Chop the celery and fry in the oil for 5 minutes. Then add the frozen peas, separating them with the fork as they thaw. After that add the mushrooms, water and marmite and salt and pepper as per your taste. Let it simmer for about 12-15 minutes. Moisten the cornflour with a little water and add to the mixture. Let it cook for more 3-5 minutes. Now you are good to go.
SAVOURY LIMA BEANS
Ingredients
1 tbsp oil or butter
2 tbsp minced onions
3 tpsp green pepper
1 cup tomato puree
2 and a half cups cooked Lima beans
Method
Heat oil. Add onion and green pepper. Let them saute over
medium flame till onions are slightly brown. Now add the tomato
puree and salt and let it cook for 5 minutes. Lastly, add
the Lima beans and let it simmer over low heat till thoroughly
heated.
CHICKEN IN ORANGE JUICE
Ingredients
4 boneless chicken breasts halved
6 oranges juiced
3 tbsp thin sliced green onion
black pepper to taste
Method
Thin out the chicken breasts with a tenderizing mallet. Heat the orange juice, green onions and pepper in a frying pan over medium flame. Don't use high flame as the juice will become bitter. Boil the chicken in the juices till it's firm. This generally takes 10 minutes depending on the thickness of the chicken.
QUICK SANDWICH
Ingredients
2 slices dark rye bread
one fourth pound thin sliced corned beef
3 ounces drained sauerkraut
2 slices cheese
one fourth cup Thousand Island dressing
Method
Place the bread on the frying pan. Layer it with corned beef, sauerkraut and cheese slices. Heat on high flame till the cheese melts for about 3-4 minutes. This has to be eaten hot with Thousand Island dressing.
